May in Jackson Hole is a transitional month from Winter into Summer. Weather is still hit or miss Yellowstone and Grand Teton National Parks open for the summer season. Businesses reopen for summer and things begin to pick up again.
There may be enough snow in the high country to participate in a snowshoe or cross country skiing tour, particularly early in the month.
Grand Teton and Yellowstone National Parks open Yellowstone in particular will still have a heavy snowpack, with much of the park situated 7000' or more above sea level. Visitor numbers are low so that there are few crowds to deal with and the wildlife become quite active. From mid-May until mid-June is an excellent time to explore the area without the heavy summer crowds.
